Our Menu This Week

Early on Sunday mornings I typically sit down with my iPad and a notebook and plan our meals for the week while I make my grocery list.  I'm pretty "Type A" about this process and like to do it when the house is calm and quiet.  Preferably with a cup of coffee.

Thanks to Pinterest I make 3-5 new recipes each week and then brace myself for the feedback from the family!

Our menu this week consists of the following:

Lasagna Chicken and Quinoa with chopped broccoli


Asian Lettuce Wraps with healthy stir fried rice


Black Bean and Chicken Quinoa Casserole with butternut squash instead of sweet potatoes 


Healthy Potato Soup and a salad


And a tried and true roast recipes with lots o veggies in the crock pot.  

Maybe I'll have some help again this week!

  1. It all looks good! I am type A too, but I fly by the seat of my pants in the market, buying what looks good to me at the time. Last night we had BLT's with avocado, and tonight, Nachos.

    I made that black bean and quinoa casserole and was worried as I made it that it wouldn't be any good, and we all scraped our plates clean!! Hope your clan likes it too!

    I'm so impressed with how many new recipes you cook while also working full time. Super woman! :)
